This low carb dish is the perfect dinner party starter, main meal or snack. The Zucchini is quite literally a delicious vessel for all of the tasty goodness.

Zucchini is packed with nutrients such as folate, Vitamin B6, potassium, manganese, Vitamin C and and Vitamin K. Zucchini is low calorie, low in carbohydrates and high in fibre.
Stuffed with this tasty chicken mixture, it's a meal the whole family can enjoy.
Pre-heat the oven to 200C.
Scoop the middle part of the zucchini out to create space for the filling.
Bake the empty zucchini boats for 20 minutes.
Start preparing the filling by placing a saucepan on medium heat and adding the olive oil.
Once the oil is hot add the onions and garlic and sauté for 3 minutes.
Add the chopped tomato and shredded chicken.
Add the Collagen and/or Fibre (optional).
Remove the zucchinis from the oven once they are done and stuff them with the filling.
Sprinkle the cheese on top and bake for another 5 minutes or until the cheese has melted.
Rather than waste the Zucchini filling, mince half of it and add it back to the chicken mixture.
