Spinach and Strawberry Salad with Basil, Mint Dressing

A colourful, simple and deliciously refreshing salad with a multitude of flavours.

 4 cups baby spinach
 1 cup strawberrieschopped
 1 cucumberchopped
 1 avocadodiced
 ½ cup white beansdrained and rinsed
 ¼ cup pine nuts or sliced almonds
Dressing
 3 tbsp apple cider vinegar
 ½ cup olive oil
 2 cloves garlicminced
 2 tbsp fresh basilchopped
 1 tbsp fresh mintchopped
 salt and pepper to taste

Mix all of the salad ingredients in a bowl.

Whisk together all of the dressing ingredients and pour over the salad just before serving.

This dressing keeps well so I often make a batch and have it over several salads.
