Parsnip and Bacon Soup is a delicious heart warmer at any time of the year. A delicious combination of the sweetness of the parsnip with the crunch and saltiness of the bacon.
Of course, the bacon can be left aside for vegetarians as it's added last.
Getting Started

Wash and peel the Parsnips.

In a deep saucepan, brown the onion with olive oil.

Add the parsnip and sauté for a few minutes.

Add 400 ml of water, salt and pepper and bring to the boil.

Season with salt and pepper and bring to the boil.

Cover and cook for 20 min.

Mix everything with food processor/blender.

Add the coconut milk and mix again.

Cook the bacon in a pan and cut into pieces.

Pour the preparation into bowls and add the bacon and parsley on top.

I've used a blender which will allow you to make your soups and compotes more simply. Just put all the ingredients in the appliance and your preparation is ready in 20 minutes. An essential device if you love soups but don't want to spend hours in the kitchen!
