Kale and Onion Frittata

Kale is SO good for you and so fun to cook with. Add as much or as little as you wish.

 8 eggs
 2 cups copped kale
 1 brown onionchopped
 1 tsp dried thyme
 1 tbsp extra virgin olive oil

The beauty of a frittata is that you can pretty much add to it whatever you have in the fridge. So, simple to prepare and suitable for an individual meal or for the family.

Getting started

Preheat oven to 180C. Grease an 8x8 or 9x9 baking pan or pie dish.

In a sauté pan, heat olive oil over medium heat.

Add the onions and cook until translucent and beginning to brown, 8-10 minutes.

Add chopped kale and cook until wilted, 5 minutes.

Season with salt and pepper and remove from heat.

In a large mixing bowl, whisk the eggs and then add the kale and onion mixture and thyme. Stir until combined.

Put the egg mixture into the greased baking dish and cook for 35 - 45 minutes until the centre no longer jiggles and the top is slightly browned.

A sprinkle of parmasan cheese and chilli flakes provide a delicious twist.
