When you combine eggs with spinach, you have one of the healthiest meals. Eggs and spinach are both nutrient-dense and are a great source of calcium and iron.
Place eggs in a saucepan and cover with water. Bring to a boil and then remove from heat and let sit for 10 minutes.
Add oil and garlic clove to a sauté pan. Heat over low heat until garlic begins to sizzle.
Remove clove and add spinach. Cook for a 2 – 5 minutes until wilted.
Season with lemon juice, salt and pepper.
Peel the eggs and cut in half. add to the spinach and enjoy.
