Ingredients

 6 sweet potatoes
 1 tsp gingerbread spice
 1 tbsp coconut oil
 2 beaten eggs
 ½ the zest of half an orange
 1 the juice of an orange
 2 tbsp Paleo crumble
 8 Medjool dates
 1 cup nuts
 ½ tsp cinnamon
 ½ tsp salt

Sweet Potato Gratin is a great way to start any day. It's become very fashionable and most good breakfast cafes will have a version on their menu.

Getting started

Bake the sweet potatoes in the oven at 210 ° C for 1 hour.

Once they're cool enough to handle, peel and puree.

Add the rest of the ingredients, then mix well.

Chop the nuts and mix with the rest of the crumble ingredients until you get a compact paste.

Pour the sweet potato puree into a casserole dish, spread the crumble mix and cover with aluminum foil.

Put in the oven at 200 ° C for 45 mins.

Remove the foil and cook for a further 15 mins.

If you don't have a Paleo crumble to hand, crushed oat clusters or any similar breakfast cereal works well.

If serving for breakfast, it's delicious with eggs (cooked any way) and baked tomatoes.
