Add the strawberry puree to a saucepan through a sieve over a medium heat and reduce by half.
Cool to room temperature.
To a bowl add the crushed biscuits.
Add the melted butter.
Mix well and transfer to greased cake dish.
Flatten the crumb in the bottom of the cake dish and press up the side of the cake dish.
Freeze for 10 minutes.
In a mixing bowl, whip the cream cheese until smooth, and then add the strawberry puree.
Add the sugar and vanilla bean and whip.
Add the cream and mix.
Add to the base and smooth until even in the crust.
Chill for at least 4 hours.
Top with fresh strawberries.
