Lemon Barley Water

Barley water is well known to have many health benefits. It is high in fibre, promotes good digestion, flushes out toxins and aids general gut health. Our Lemon Barley Water recipe is easy to prepare and super refreshing.

 2 medium sized lemons, zested and juiced
 ¾ cup pearl barley
 ½ cup honey
 6 cups water
 handful of fresh mint

Rinse the barley in a sieve under cold water until the water runs clear.

Place barley in a saucepan with grated lemon zest and 6 cups of water.

Bring to a boil over medium heat.

Once boiling, reduce the heat and simmer for 10 minutes.

Strain mixture into a heatproof bowl (do not eat the barley).

Add honey to the bowl and stir to dissolve.

Stir in lemon juice and cool to room temperature.

Pour into bottles and refrigerate until chilled.

Serve with ice and fresh mint.

Instead of cooling the mixture, serve hot immediately from the saucepan.
