These mushrooms are so flavoursome and can be a starter or meal on their own.

Preheat the grill. Line a baking tray with baking paper.
Clean the mushrooms, remove the stems and hollow out the heads.
Spread the mushroom heads on baking paper and grill in the hot oven for about 8 minutes. Turn halfway through.
While the mushrooms are cooking, peel garlic and chop finely.
Heat the oil in a pan and sauté the garlic for about 2 minutes.
Add the spinach and let it wilt.
Season with grated nutmeg, salt and pepper and sauté for 2-3 minutes.
Strain the spinach through a sieve and squeeze out excess liquid with a spoon. Finely chop the spinach and mix with sour cream, parmesan and cream cheese.
Take the grilled mushrooms out of the oven and let them cool briefly.
Fill with spinach mixture.
Sprinkle the filling with grated mozzarella and grill in the oven for another 4-6 minutes until the cheese has melted and turned golden brown.
Delicious as a side to steak or fish with simple green beans.
