Ingredients
- 2 cups spelt flour
- 1 tbsp cinnamon
- 1 tbsp ginger
- 2 tsp baking soda
- 1 tsp allspice
- ½ tsp salt
- 1 cup maple syrup

2 cups milk of choice
- ¼ cup ground flaxseed
- 2 tbsp white vinegar
- ½ cup molasses

½ cup raisins

So simple and full of spicy goodness, this vegan gingerbread loaf will make your house smell amazing.
Getting started
- Preheat oven to 180C.
Line a 23x13cm (9x5inch) baking tray.
Mix the maple syrup, white vinegar, molasses, and milk with the flax seed in a deep bowl and let the flax thicken for minimum 10 minutes.
Whisk the dry ingredients in another bowl.
Combine the wet and dry ingredients.
Pour into the prepared baking tray.
Bake for 50 minutes.
Turn off the heat without opening the door and leave the loaf in the oven for an extra 10 minutes.
Take out and let cool.
Annabelle's tips
- For better taste and texture, leave overnight.
- For a little added decadence, once cooled, sift a small amount of icing sugar on the loaf.
