- 1 iceberg lettuce

1 handful of green beans cut into 1/4 inch pieces

1 beetroot shredded

1 nectarine or peach chopped

¼ cup pistachios shelled
- ¼ cup freshly squeezed lemon juice
- ½ cup extra virgin olive oil

1 garlic clove minced

1 small handful of fresh basil chopped
Dressing
Directions
Hand tear the lettuce into a salad bowl. Add the rest of the ingredients and toss with the salad dressing.
