Spinach and Strawberry Salad with Basil, Mint Dressing

Ingredients
- 3 cups baby spinach

1 cup strawberries chopped

1 cucumber chopped

1 avocado diced

¼ cup pine nuts or sliced almonds
- 3 tbsp apple cider vinegar
- ½ cup olive oil

2 cloves garlic minced
-
2 tbsp fresh basil chopped

1 tbsp fresh mint chopped

salt and pepper to taste
Dressing
Directions
- Mix all of the salad ingredients in a bowl.
Whisk together all of the dressing ingredients and pour enough over the salad to dress, just before serving.

This dressing keeps well so I often make a batch and have it over several salads.
