Ingredients
- 200 g smoked salmon
- 6 cups rocket
- 1 avocado
- 2 small spring onions
- ½ juice from 1/2 lemon
- ½ juice from 1/2 lime

4 tbsp mayonnaise (home-made) or store bought

1 tsp lime rind

- This easy, refreshing salad is the perfect light meal on its own or as a side dish to share.
- The salmon and avocado will keep you feeling full for hours.
Getting started
- Wash and drain the rocket and spread it in a salad bowl.
Wash and chop the parsley and spring onion and add them to the bowl.
Peel the avocado, remove the seed and cut it into thin stripes. Squeeze some lemon over it to prevent the avocado from getting brown.
Slice the smoked salmon and add it to the bowl with avocado.
Now, prepare the dressing by mixing mayonnaise with lime rind and lime juice.
Pour the dressing over the salad and enjoy!
