Sautéed King Prawns with Smoked Paprika

450 g large raw king prawns
peeled and de-veined -
120 g long grain rice

45 g olive oil

1 small onion
diced -
5 cloves of garlic

1 green pepper
diced -
1 tsp smoked paprika

400 g chopped tomato

10 g fresh parsley

What are we cooking today?
Smokey prawns with plenty of garlic, for a rich and healthy delicious dish. Replace the rice for cauliflower rice for an extra health kick. This recipe can be for one large portion, two to share, of four portions as a starter.
Getting started
Cook the rice in salted boiling water until cooked, about 20 minutes
- While the rice is cooking, heat a large frying pan on a medium heat.
Add and heat the olive oil then carefully place the prawns into the hot pan. Season with salt and pepper, and once coloured, turn the prawns to cook the other side.
Add in the onion, green pepper and garlic, and fry with the prawns. Stir to make sure nothing burns.
Add in the paprika, the chopped tomato and season with salt and pepper. Leave to simmer and come up to heat.
Once the rice is cooked remove from the heat. Check the seasoning of the sauce and that the prawns are cooked through.
Serve the rice, topped with prawns and sauce, and sprinkle with chopped parsley.
