1 can salmon drained

½ stalk celery diced

½ green apple diced
- 1 tsp capers
- 1 tbsp hemp seeds

2 tbsp fresh parsley chopped
- 1 tbsp extra virgin olive oil

6 witlof leaves also known as Belgian Endive
Directions
- Mix all the ingredients together (except the witlof).
Place the mixture evenly in each witlof leaf and serve.
