Ingredients
- 1 large cauliflower head cut into florets
- 2 tbsp olive oil or avocado oil
- 1 cup unsweetened almond, coconut or cashew milk
- 1 tbsp gluten free flour
- ½ cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 pinch sea salt

This creamy and delicious comfort food provides all the pleasure but with a lot less carbohydrates.
Getting started
- Preheat your oven to 200°C.
On a large, baking sheet, covered with baking paper, arrange your cauliflower in a single layer.
Roast them until they are golden on the sides and fork-tender.
Add your milk and flour to a saucepan and whisk until incorporated.
Heat and stir in the cheese, garlic, onion, and salt and pepper. Stir constantly to avoid cheese sticking and burning to the bottom of the pan.
Cook until you get a smooth thick sauce.
Remove from heat and pour your cheese sauce over the roasted cauliflower and toss to coat.
Sprinkle with parsley and serve immediately.
Annabelle's tip
For an extra hit of texture and saltiness, sprinkle with crumbled bacon before serving.
