Ingredients

75 g minced beef

¼ cup red capsicum diced

¼ cup red onions diced

2 eggs

1 tortilla (wrap) ideally brown rice or wholemeal

2 tbsp shredded cheddar cheese

1 tbsp salsa

What are we cooking today?
It's called a 'Breakfast' Burrito because it contains egg, however, this Mexican Burrito is good any time of the day. It's easy to prepare and full of flavour.
Getting started
- Place a pan on medium heat.
Add the minced beef and cook through.
Add the diced red capsicum and red onions.
Once the vegetables have softened, add the eggs
Place a tortilla wrap flat on a plate and add the spinach, egg mixture, cheese and salsa.
Sprinkle with some salt, pepper and fold the wrap.
Annabelle's tips
Add a sprinkle of chilli for a bit of kick!
