Ingredients

1 cooked chicken shredded

1 celery stalk chopped
-
½ cucumber sliced

1 avocado sliced

½ iceburg lettuce chopped

¼ cup lemon juice around 1 lemon
- ½ cup olive oil

4 fresh large basil leaves chopped finely

salt and pepper to taste

Chicken, lemon and basis together make this the perfect meal or side salad!
Getting started
- Put all of the salad ingredients (except avocado) into a bowl and set aside.
Mix together the ingredients for the dressing.
When ready to serve, add to the salad a little at a time until the lettuce is coated.
- You may have extra dressing to use for another day.
Top with sliced avocado and serve.

I keep this dish simple and buy a cooked chicken. Alternatively, cook and shred 400 grams of chicken breasts.
