80 g mozarella cheese finely sliced

30 g semi sun-dried tomatoes chopped

10 g fresh basil washed

3 chicken breasts skinless

salt and pepper

2 tsp mixed Italian herbs/seasoning

12 toothpicks or string

1 tbsp sun-dried tomato oil

What are we cooking today?
A delicious classic. So easy to make and looks really impressive.
Getting started
- Preheat oven to 200C.
Season the chicken breasts and slice down the middle to make a pocket.
Stuff each breast with mozzarella, tomatoes and basil.
Close with the toothpicks.
Put the chicken in a baking tray and drizzle with oil.
Bake for 20-25 minutes.
Annabelle's tips
- An alternative to baking the chicken is to cook in a saucepan.
- Green beans and/or a simple green salad work well as accompaniments.
