Grilled Sardines with Walnut and Olive Salad

Ingredients

4 sardines

1 red onion finely sliced

1 tbsp dried oregano

6 ripe tomatoes

10 black olives Pitted

1 small romaine lettuce You can use any type of lettuce you have

1 red pepper

1 cucumber Peeled and sliced

30 g walnuts

20 g olive oil

1 egg yolk

10 g apple cider vinegar

1 tsp dijon mustard
-
2 cloves of garlic

1 anchovy fillet Optional but adds depth and saltiness

Simply grilled fresh fish, on top a healthy salad. You cant beat it!
Getting started
- Brush the sardines with oil and some of the oregano and place under a grill for 4-5 minutes, on each side, until crisp and cooked.
To make the dressing place the egg yolk in a small food processor with the garlic, oregano, mustard, vinegar and anchovy fillet and blitz.
Gradually add the oil until thickened then loosen with a splash of water until at pouring consistency, taste and season.
Simply mix together all the remaining salad ingredients, season with salt then toss with the dressing and lay the sardines on top of the salad.

Once the fish is cooked, remove from the grill and lay them on top of the plated salad.
