Ingredients

1 tbsp extra virgin olive oil

2 cloves garlic minced
-
1 onion finely chopped

225 g low fat ground mince beef
-
4 cups chicken stock
-
1 can diced tomatoes
-
¾ cup canned white kidney beans drained

¾ cup canned kidney beans drained

2 tsp chilli powder
-
1 ½ tsp ground cumin
-
280 g elbow pasta
-
¾ cup tasty cheese shredded

1 handful fresh parsley chopped

What are we cooking today?
A Mexican take on the traditional mac and cheese and one dish to wash!
Getting started
- Heat the oil in a large pot.
Add the garlic, onion and beef and stir until cooked, continually breaking up the beef.
Add the chicken stock, tomatoes, beans, chilli powder, and cumin, stir and bring to a simmer.
Add the pasta and bring to the boil.
Cover, reduce heat and simmer stirring occasionally until the pasta is cooked.
Add the cheese, cover and cook until the cheese has melted.
Add the parsley and serve.
Annabelle's tips
A sprinkle of chilli flakes on the top is a nice touch.
