Ingredients

2 tbsp extra virgin olive oil

1 lemon juiced
-
¼ cup flat-leaf parsley leaves chopped

1 long red chilli de-seeded and chopped
-
2 ½ cups cooked shredded chicken could be left over from a bbq or another chicken dish

2 mangoes peeled, cut into 1cm cubes

100 g mixed salad greens washed and dried

Super quick to prepare and delicious as a side or a meal.
Getting started
- Combine oil, 2 tablespoons lemon juice, parsley and chilli in a small bowl.
Combine chicken, mango and salad greens in a large bowl. Drizzle over chilli dressing.
Toss lightly to combine.
Serve.
Annabelle's tips
Add the dressing just before serving so that the mango doesn't soften too much.
