Non-Dairy Berry Parfait

These no-bake dairy free parfaits are so easy to make! And the flavours are so all year round for breakfast, desert or a snack.

 ¼ cup soaked raw cashews soak for at least 20 minutes - up to 1 hour
 ¼ cup unsweetened almond or coconut milk
 ¼ tsp vanilla
 ½ cup berriesany combination of blueberries, blackberries, raspberries, strawberries
 ¼ cup rolled gluten-free oatsraw
 ½ tbsp hemp seeds
 ½ tbsp almonds
 ½ tbsp walnuts
 1 tbsp Collagen PeptidesOptional
 1 tsp Prebiotic Acacia FibreOptional

This is a delicious and easy sweet treat that’s allergy friendly, and a great way to kick off the day.

Getting started

Combine the cashews, milk and vanilla in a blender and blend until smooth to make cashew cream.

Optional: add Collagen and Fibre.

Mix half of the berries in a blender.

Crush half of the almonds and walnuts and mix with the oats.

Layer the nut mix, cashew cream and fruit mix in a small glass -

Top with the remaining nuts, berries and hemp seeds and enjoy!

Apricots and pineapple can be added or substituted for the berries for a variation on this parfait. Equally delicious.
