Welsh Rarebit

Welsh rarebit is a British dish consisting of a hot cheese-based sauce served over slices of toasted bread. It's a popular classic and is a staple of British fare and a common pub food, often paired with a pint of beer or ale.

 30 g butter
 375 g tasty cheese grated
 ½ cup milk
 2 tsp plain flour
 ¼ cup beer
 1 tsp mustard powder
 1 egg
 1 tsp Worcestershire sauce
 ½ tsp salt
 1 pinch cayenne pepper
 8 slices sourdough breador bread of choice

This is definitely not a breakfast for every day, but it's a wonderful, tasty treat.

Getting started

Melt butter in a small saucepan on a medium heat, stir in flour and cook gently for 1 - 2 minutes, until a thick paste is formed.

Add milk and beer and stir until sauce thickens.

Add mustard, salt, Worcestershire, cheese, and cayenne to taste.

Stir constantly until cheese melts.

Remove saucepan from heat and stir in beaten egg.

Toast bread on one side, spread other side with cheese mixture and grill until golden.

Serve hot.
