Ingredients

 1 iceberg lettuce
 1 handful of green beanscut into 1/4 inch pieces
 1 beetrootshredded
 1 nectarine or peachchopped
 ¼ cup pistachiosshelled
Dressing
 ¼ cup freshly squeezed lemon juice
 ½ cup extra virgin olive oil
 1 garlic cloveminced
 1 small handful of fresh basilchopped

Directions

Hand tear the lettuce into a salad bowl. Add the rest of the ingredients and toss with the salad dressing.
