Strawberry, Almond and Kale Salad with Citrus Vinaigrette

A healthy, tasty salad for lunch or a side. Bright and colourful, a winner to take when someone says "just bring a salad".

 1 bunch Kale (roughly 300g)stems removed
 500 g strawberriessliced
 ¼ cup sliced almonds
 1 lemon - juice
 2 tbsp extra virgin olive oil
 1 tsp steviaor equivalent
 ¼ tsp salt
 ¼ tsp black pepper
 4 tbsp orange juiceoptional

Green vegetables are an essential part of a balanced diet. This salad goes with any protein or eaten alone.

Getting started

Tear the kale into bite-sized pieces and massage with your hands until soft, about 30 seconds. (This makes the kale easier to eat.)

Place in a bowl and add the strawberries and almonds.

The dressing

To make the dressing, combine the lemon juice, olive oil, stevia, salt, and pepper and pour over the salad.

For an extra kick, splash orange juice over the salad and enjoy!
