Strawberry-almond-kale salad with citrus vinaigrette

Ingredients

 1 bunch Kale (roughly 300g)stems removed
 500 g strawberriessliced
 ¼ cup sliced almonds
 1 lemon - juice
 2 tbsp extra virgin olive oil
 1 tsp steviaor equivalent
 ¼ tsp salt
 ¼ tsp black pepper
 4 tbsp orange juiceoptional

Tear the kale into bite-sized pieces and massage with your hands until soft, about 30 seconds. (This makes the kale easier to eat.)
