Spinach and Pomegranate Salad with Tarragon Mustard Dressing

Ingredients

Salad
 4 cups baby spinach
  cup pomegranate seeds
 2 baby leekthinly sliced
 1 avocadodiced
 ½ cup white beansdrained and rinsed
 ¼ cup pine nuts or sliced almonds
Dressing
 2 tbsp apple cider vinegar
 ¼ cup extra virgin olive oil
 2 cloves garlicminced
 1 tbsp whole grain mustard
 2 tbsp dried tarragon
 salt and pepper

Directions

Mix the salad ingredients in one bowl and whisk the other ingredients to make dressing.

Generously dress the salad and serve.
