Smoked Trout with Bean Salad

Fresh, colourful and full of goodness, this salad of trout or salmon is super easy and versatile as a dish.

 450 g green beanstrimmed
 100 g baby rocket leaves
 300 g smoked trout or salmon (skin off)sliced
 2 lemons rind finely grated and juiced
 3 tbsp olive oil
 1 tbsp capersfinely chopped

Getting started

Bring a large saucepan of water to the boil.

Blanch the beans for 2 minutes or until just tender crisp.

4

Drain and refresh under cold running water.

5

Toss the beans and baby greens together.

6

Dress the greens with the lemon juice and olive oil and season with salt and pepper and toss well to combine.

7

Plate the bean salad and top with the trout and sprinkle with the lemon zest and capers.

8

Serve immediately.
