Sesame Seared Tuna with Vegetable Tagliatelle

Ingredients

 300 g fresh tuna steaks
 2 cloves garlicchopped
 1 small oniondiced
 1 carrotpeeled and chopped
 1 red peppercubed
 1 tsp smoked paprika
 300 g tomato passata
 10 g pine nuts
 2 tbsp tamari soy sauce
 160 g tagliatelle
 5 ml olive oil
 salt and pepper to taste
 10 g sesame seeds
 1 tbsp sesame oil
 1 lime
 balsamic glaze to garnish

Fresh tuna is a great source of protein, and with carbs from the pasta, this is a perfectly balanced dish in nutrition and flavour.

Getting started

Heat a drizzle of olive oil in a frying pan over a medium heat and add the onion and garlic to gently cook.

Add in the carrot and pepper and fry for 5 minutes until soft.

Stir in the paprika and then pour in the tomato passata, tamari soy sauce and season with salt and pepper.

Simmer for 10 minutes.

While this is simmering, cook the pasta according to packet instructions. (8-12 mins)

Place the tuna on a small plate, season and sprinkle with sesame seeds. Turn it over and press down to cover both sides with seeds and oil.

Place a small frying pan over a high heat, add a drizzle of sesame oil and add the tuna to the pan when hot. Sear quickly on both sides until cooked to your liking.

Once the pasta is cooked, drain, and add to the tomato sauce. Mix through and serve with the cooked tuna, a slice of lime and balsamic glaze.
