Rocket, Orange and Horseradish Salad with Mint Dressing

Visually spectacular and the flavours are strong and perfectly matched.

 300 g rocketand/or spinach
 50 g horseradishthinly sliced
 1 orangepeeled and thinly sliced
 2 tbsp walnuts
 1 tbsp fettacrumbled
Dressing
 ¼ cup fresh squeezed lemon juice
  cup olive oil
 1 tsp pepper
 1 tbsp fresh mintchopped finely

Combine all ingredients in a large bowl.

Dress only what you will eat with the dressing below.

Whisk all ingredients together and season with salt.

Pour enough dressing onto salad to coat all the veggies.

Radish, orange and shredded chicken can be added to the salad to make it a more substantial meal.

I also sometimes sprinkle with shredded coconut and/or almond shards which go so well with the pineapple.
