 300 g rocketand/or spinach
 50 g horseradishthinly sliced
 1 orangepeeled and thinly sliced
 2 tbsp walnuts
 1 tbsp fettacrumbled
Dressing
 ¼ cup fresh squeezed lemon juice
  cup olive oil
 1 tsp pepper
 1 tbsp fresh mintchopped finely

Radish, orange and shredded chicken can be added to the salad to make it a more substantial meal.

I also sometimes sprinkle with shredded coconut and/or almond shards which go so well with the pineapple.
