Roasted Cauliflower Bites

This dish is so versatile! It can be a snack, a side, or, add a protein and make it a meal.

 1 head of cauliflowerwashed and chopped into bite-sized pieces
 ½ tsp cumin
 ½ tsp garlic powder
 1 tbsp extra virgin olive oil
 ¼ cup pine nuts

Preheat oven to 200ºC.

Toss all the ingredients together on a baking sheet.

Roast for 25 – 30 minutes until browned and crispy.
