Ingredients

 2 iceberg lettuces
 1 cup rocket
 2 cups green leaf lettuce
 ½ small red onion
 2 tsp sunflower seeds
 2 tsp pumpkin seeds
 2 tsp sesame seeds
 2 tsp flaxseeds
 2 tbsp flaxseed oil (or pumpkin oil)
 juice from 1 lime
 ½ cup pomegranate seeds
 ½ cup feta cheese

A green salad goes with just about everything! It can be served as a small salad for 2 or made larger for a group gathering.

Getting started

Wash all the greens and drain them well. Tear them in smaller pieces and put in a salad bowl. A salad spinner may be helpful for draining the greens after washing.

Chop the onion into thin rings and spread evenly over the greens.

Add mixed seeds (sunflower, sesame, pumpkin and flaxseed). You don't need to have all of them just use the same amount of the ones you have. The effect on net carbs should be the same for this small amount.

Now, prepare the dressing. Mix the lime and flaxseed oil in a small bowl.

Add the feta and pomegranates.

Pour the dressing over the salad evenly. Serve as a side or by itself!
