An aromatic dish which is quick and delicious. It can be served for lunch or dinner.
Marinate the prawns with the spices, lime juice and olive oil.
Meanwhile, chop and slice the veggies.
Add one tablespoon of olive oil in a pan and bring to medium heat and sauté the veggies until they obtain a gold colour and are tender. Remove and set aside in a bowl.
In the same pan, sauté the shrimp until they are fully cooked.
Return the cookies veggies to the pan and sauté with the prawns for 1-2 minutes.
Remove and serve.
A dollop of light sour cream goes really well if desired.
If wishing to make the meal more substantial, it can be served with brown rice.
