Sweet and salty make a great combination. The pancetta does make this dish and a bit of an indulgence, but we all need those every now and again. Oysters are an excellent source of protein, vitamin D, zinc, iron and copper, and also have high levels of Vitamin C and so much many more nutrients.

 100 g thinly sliced pancettachopped
 2 tbsp flat-leaf parsleychopped
 24 fresh oysterson the half shell
 1 ½ tbsp Worcestershire sauce

Getting started

Preheat grill on high.

Line a baking tray with baking paper.

Arrange pancetta over tray. Cook for 5 minutes. Mix with parsley.

Sprinkle each oyster with pepper, 1/4 teaspoon Worcestershire and pancetta.

Place oysters onto baking tray under grill. Cook for 2 minutes until warmed through and serve.
