What is better than the word "Pudding" for breakfast. This Mint Chocolate Chia Pudding is healthy enough for breakfast but decadent enough for dessert! It will fill you up until lunch time with it's richness yet has a light, mousse like texture.

This delicious pudding takes less than 10 minutes to make (including the time to get out the ingredients!) and can be prepared the night before for a delicious breakfast. What a treat to wake up to.
In a small bowl, add the cocoa powder, and slowly add the coconut milk while stirring with a fork.
Add the chia seeds, honey, and mint extract all the while stirring well.
Add the Collagen and/or Fibre (optional) and stir well.
Put into serving jar or bowl and refrigerate for at least 4 hours (or over night).
Add shaved chocolate, mint, almonds, and raspberries before serving.
Any fruit or nuts can be added before serving.
