Beef, peppers and salsa, a wonderful combination.

 75 g minced beef
 ¼ cup red capsicumdiced
 ¼ cup red onionsdiced
 2 eggs
 1 tortilla (wrap)ideally brown rice or wholemeal
 2 tbsp shredded cheddar cheese
 1 tbsp salsa
 salt and pepper

It's called a 'Breakfast' Burrito because it contains egg, however, this Mexican Burrito is good any time of the day. It's easy to prepare and full of flavour.

Getting started

Place a pan on medium heat.

Add the minced beef and cook through.

Add the diced red capsicum and red onions.

Once the vegetables have softened, add the eggs

Place a tortilla wrap flat on a plate and add the spinach, egg mixture, cheese and salsa.

Sprinkle with some salt, pepper and fold the wrap.
