Chicken, lemon and basis together make this the perfect meal or side salad!
Put all of the salad ingredients (except avocado) into a bowl and set aside.
Mix together the ingredients for the dressing.
When ready to serve, add to the salad a little at a time until the lettuce is coated.
You may have extra dressing to use for another day.
Top with sliced avocado and serve.
I keep this dish simple and buy a cooked chicken. Alternatively, cook and shred 400 grams of chicken breasts.
