 1 cooked chickenshredded
 1 celery stalkchopped
 ½ cucumbersliced
 1 avocadosliced
 ½ iceburg lettucechopped
Dressing
 ¼ cup lemon juicearound 1 lemon
 ½ cup olive oil
 4 fresh large basil leaveschopped finely
 salt and pepper to taste

Chicken, lemon and basis together make this the perfect meal or side salad!

Put all of the salad ingredients (except avocado) into a bowl and set aside.

Mix together the ingredients for the dressing.

When ready to serve, add to the salad a little at a time until the lettuce is coated.

You may have extra dressing to use for another day.

Top with sliced avocado and serve.
