Stuffed chicken breasts sound like a fancy concept, but they’re actually easy to make — and no matter what, they’re bound to look impressive.

 80 g mozarella cheesefinely sliced
 30 g semi sun-dried tomatoeschopped
 10 g fresh basil washed
 3 chicken breastsskinless
 salt and pepper
 2 tsp mixed Italian herbs/seasoning
 12 toothpicksor string
 1 tbsp sun-dried tomato oil

Preheat oven to 200C.

Season the chicken breasts and slice down the middle to make a pocket.

Stuff each breast with mozzarella, tomatoes and basil.

Close with the toothpicks.

Put the chicken in a baking tray and drizzle with oil.

Bake for 20-25 minutes.

An alternative to baking the chicken is to cook in a saucepan.

Green beans and/or a simple green salad work well as accompaniments.
