Once you've made this paste, you can add any combination of protein and/or vegetables. The aromas that fill the house when you make your own curry paste are simply superb.

 8 fresh long green chilliescoarsely chopped
 8 cm piece of fresh gingerpeeled, finely chopped
 8 cm piece fresh turmericpeeled, finely chopped
 2 lemongrass stems (pale section only)finely chopped
 5 shallotspeeled, finely chopped
 2 garlic cloves
 2 tbsp water
 1 tsp shrimp paste
 ½ tsp salt

This versatile curry paste can be added to as per your heat liking.

Then when ready to add your vegetables and/or protein, just add water, coconut milk and fish sauce until you achieve the desired consistency. It also works as a dry curry.

Getting started

Place chilli, ginger, turmeric, lemon grass, shallots and garlic in the food processor.

Process until finely chopped.

Add water and process until smooth.

Transfer to a bowl.

Stir in shrimp paste and salt.

Heat oil in a saucepan over medium heat.

Add curry paste and cook, stirring, for 3 minutes or until fragrant.

The curry mixture (uncooked) can be pre-made and frozen. Then simply defrost and cook when required.
