These delicious cookies are made with molasses and turbinado sugar rather than regular sugar so they're not as indulgent as traditional cookies. So easy to make and perfect with a cup of tea.

  cup canola oil
 1 ½ cups Turbinado sugar
 1 egg
 4 tbsp Blackstrap Molasses
 2 cups whole-wheat pastry floursifted
 2 tsp baking soda
 1 ¼ tsp ground cinnamon
 1 ¼ tsp ground ginger
 ¼ tsp sea salt

Getting started

Preheat your oven to 180C.

Line a baking tray with parchment paper.

Combine 1 cup of the sugar and canola oil in a big bowl and mix.

Beat in the egg.

Stir in the molasses until everything is evenly incorporated.

Sift the flour, ginger, cinnamon, salt, and baking soda into the mixture and stir.

Using your palms, roll the batter into balls and coat with the remaining sugar.

Then place them onto the prepared baking tray.

Bake for 10-12 minutes, until they are set.

Cool on a wire rack.

For an extra kick, add chopped stem ginger to the mix before cooking.
