 200 g Udon noodlesCooked and drained
 1 can chickpeas
 3 cloves garlicminced
 ½ red onionthinly sliced
 1 zucchinithinly sliced
 1 red pepperthinly sliced
 1 yellow squashthinly sliced
 zest and juice of 1 lemon
 1 handful fresh parsleychopped
 ½ cup olive oil
What are we cooking today?

A quick and easy salad that is brightly coloured and suitable all year round.

Getting started

Sauté onion and garlic in a pan with ¼ cup olive oil for 3-5 minutes.

Add the zucchini and yellow squash to the pan and sauté for 10 minutes.

Add the cooked noodles, lemon, remaining ¼ cup olive oil, and parsley. Add in chickpeas.

5

Continue cooking until heated through and serve.
