Firecracker smothered salmon is one of the tastiest seafood dinners you will make. Sweet and salty with a hint of spice — the addictive firecracker sauce pairs beautifully with fresh salmon fillets.

 1 tsp minced garlic
 ½ tsp minded ginger
 1 tbsp olive oil
 1 tbsp low sodium low soy sauce
 2 tbsp Heinz chili sauce (substitute with Buffalo Wing Sauce or hot sauce to suit your heat preference)
 1 tsp brown sugar (or brown sugar substitute)
 12 tsp sriracha (adjust to suit your heat preference)
 4 salmon fillets (skin off)
 ½ tsp paprika (mild, smoky or spicy)
 ¼ cup chives chopped

Whisk all of the ingredients in a shallow bowl (leave some chives to sprinkle after cooked).

Coat each piece of salmon in the marinade, cover with cling wrap and put in the fridge for minimum 10 minutes (ideally 2hrs-24hrs).

Preheat oven to 180°C.

Remove the plastic wrap from the baking dish and bake for 15 to 20 minutes. (baking time could vary depending on the thickness of the salmon).

Sprinkle with left over chives and serve.
