A unique way to serve fruit and so many different variations to these impressive little "cakes" that can be breakfast or a snack during the day.

Cinnamon bread made into a cupcake case in which to put any variety of fruit. Whoever would have thought? Ingenious.
Preheat oven to 175C and grease a cupcake tray.
In a mixing bowl, add the condensed milk, milk, and eggs and whisk to combine.
Add the vanilla essence, and cinnamon and whisk well.
Dip and cover each slice of bread in the mixture.
Take each soaking piece of bread and sculpt into each of the cupcake cases.
Place in the oven and bake for 15-18 minutes (until golden).
Remove from oven and cases and allow to cool.
Fill each cinnamon base with fruit and top with cream.
Sprinkle some cinnamon and icing sugar (optional) over each serving.
Drizzle with maple syrup (optional).
The baskets can be prepared but don't add the fruit until just before serving as they can make the baskets soggy.
The baskets are also delicious straight from the oven and served warm. Again, only add the fruit at the last minute.
