Preheat the oven to 200°C.
Use a fork to create numerous holes in the sweet potatoes.
Place the sweet potatoes on a baking sheet with baking paper and bake for 45 minutes.
Place a pot on the stove top on medium heat and add the coconut oil.
Once the oil has melted add the onions and minced beef, and cook through.
Once the beef is well cooked, add in the celery, carrot, zucchini and cook for another 5 minutes.
Next add in the diced tomatoes and chilli seasoning.
Bring the chilli to a boil and then lower to a simmer until the sweet potatoes are done.
Once the potatoes are done, split them in half and fill them with the chilli.
The chilli mixture can be made in bigger batches and frozen for future meals.
