Chicken Salad

So quick and simple but delicious and healthy.

 1 cup cooked chickenshredded
 ½ celery stickdiced
 ¼ cucumberdiced
 1 tbsp sunflower seeds
 1 tbsp extra virgin olive oil
 2 tbsp corn kernels
 1 romaine lettuce
 ¼ cup kalamata olivessliced
 ¼ cup cherry tomatoeshalved
 ½ red onionfinely sliced
 1 lemon cut into wedges for serving
 salt and pepper to taste

Mix all the ingredients together and serve in a lettuce wrap or on a bed of greens.

Crumbled feta cheese is a nice addition to this salad but not essential as it's delicious (and more healthy) on it's own.
