A seasonal salad that is the perfect combination of flavours and so simple to prepare. Chicken and mango are delicious together.
Super quick to prepare and delicious as a side or a meal.
Combine oil, 2 tablespoons lemon juice, parsley and chilli in a small bowl.
Combine chicken, mango and salad greens in a large bowl. Drizzle over chilli dressing.
Toss lightly to combine.
Serve.
Add the dressing just before serving so that the mango doesn't soften too much.
