Ingredients

 1 cabbagejust the outer leaves, cleaned and the thick stem removed
 ½ cucumbercut into matchsticks
 1 carrotcut into matchsticks
 ½ avocadosliced
 1 small handfull bean shoots
 2 sprigs fresh basilchopped
 4 sprigs fresh mintchopped
 1 small handful fresh corianderchopped
Dipping sauce
 ¼ cup extra virgin olive oil
 1 tsp gingerminced
 1 garlic cloveminced
 1 spring onion shootsliced

This dish is so easy and so fresh. The only thing that takes the time is the cutting of the vegetables and herbs, but it is worth it!

Roll all the ingredients in the cabbage like you would a burrito.

Serve with dipping sauce.
